El Colibri

El Colibri has been welcoming guests since 2005. A traditional estancia, its architecture draws on the grand Argentine ranches of the last century. In 2011, just a few kilometres away, the owners opened Hacienda Don André, a new 160-hectare estate dedicated to livestock farming. Chef Léo Bramajo sources meat from the local butcher and regularly offers guests meat from cattle raised at Hacienda Don André, where all the cured meats are produced on site. Besides meat, most of the ingredients used in the kitchen are produced on site as well: 90% of the vegetables and 60% of the fruit served come from the organic vegetable garden. Many other organic products are also available: the estate’s hens supply fresh eggs for breakfast omelettes, the cow Margarita provides the milk, while the cured meats and cheeses come from local artisans.

La Maison
Villa at the El Colibri estate
Facing the Sierra, La Maison de El Colibri is a true estancia with immense charm, set in the heart of the Argentine pampa. This delightful residence, with its thatched roof, interiors decorated in colonial style and panoramic view over the river, promises memorable moments with family or friends. Like an Argentine gaucho, set out on long horseback rides to explore the property's grasslands and forests. Try a polo lesson or go fishing. After a full day, enjoy a glass of Malbec, comfortably settled on your terrace, where only birdsong will disturb the perfect calm.
