Estancia Colomé, owned by the Swiss Hess family, is a remarkable estancia and winery in the middle of nowhere (a 30 km dirt road from the village of Molinos). The «bodega» produces the highest-altitude wines in the world (2,300 m), and can be toured with Colomé's own experts. The estancia is itself almost self-sufficient, raising cows, sheep, pigs and goats, alongside fruit and vegetable gardens that can also be visited.
The kitchen could not be in better hands than those of chef Patricia Courtois, who created a menu specially for Colomé. Her cooking follows the rhythm of the seasons, on the principle that it is always preferable to use ingredients available on the property. One of her core tenets is kilomètre 0, a Slow Food philosophy of eating what is nearby, reducing the distance between land and kitchen.
