An Asian patchwork
By Laurent Guillot, Founder of Étendues Sauvages: “Vietnam is - among other things - history and culinary art. Fairly mild in the north, much spicier in the south, Vietnamese cuisine finds its middle ground around Hué and Hoi An, in the centre of the country. Lemongrass, coriander, mint, Thai basil - a profusion of scents and flavours finds its way to your table. A lunch in Hue, in a family home steeped in history, left me with a lasting memory. As much for the encounter with the owner, Mr Pham Ba Vinh, descendant of a mandarin of the royal family, as for the discovery of the dishes served to us. I recommend it without any hesitation!”
